Summer time?
I know for some that this time of year is still full of cold dreary weather. Snow banks and icy roads in the middle of March can seem daunting! It wasn’t long ago( 3 months to be exact) that I too was experiencing dry skin and chapped lips in Toronto. Believe it or not I miss the cold and wintry weather. I loved to cozy up to my little darlings in front of a warm fire and sip hot cocoa. I’m sure I will be missing it that much more as soon as the Arizona heat kicks in and reminds me what the desert is really all about. Although we are having the best weather now, it still feels like summer time in comparison. It may seem as if pushing warm weather treats is an early prelude to summer well before it should be mentioned; I guess that is true for some but not for us in the South West . When the citrus are providing their yearly harvest you must make the most of it.
Homemade
When the weather starts to warm you tend to want to eat lighter. Salads and grilled meats are almost always a go to for my darlings and I. Salad seems to be an easy go to for lunch and even a quick dinner. Especially when picked fresh from the garden. I like to make my own salad dressing because as you all know I’m big on minimizing sugar and overly processed foods. Store bought dressing can be chosen in a pinch, but with slightly more effort you can have a healthy, delicious option prepared in the same amount of time or less than you would have spent in the store line.
Ingredients
All the ingredients that go into this dressing are probably already in your pantry. Honey is one that I always have on hand. Local raw honey can help with allergies and colds. It has been nice to be able to buy such a large jar to acclimate ourselves to the local pollen and dust that had our sinuses raging. The switching between countries and cities has our bodies trying to acclimatizes and sometimes the transition can be hard. So I try and add lemon and honey to everything I can get my hands on. One glass of water with lemon and honey works like an antiseptic and can really clear out your sinuses. The added vitamin c in the lemon and anti-bacterial elements of the honey is also rather appealing aside from taste seeing as we are still dealing with the unknowns of a pandemic.
Most know that when making a concoction such as this that one must have an emulsifier. Oil and water don’t mix and neither do lemon juice and oil. You must have something to join the two together, Honey is the stabilizing element for this recipe. Lemon Honey, and Green Onion Vinaigrette
Ingredients
- 1 Tsp Lemon Zest Freshly Grated
- 1/4 Cup Olive Oil Extra Virgin
- 1 Tbsp Honey Local, Raw
- 2 Tbsp Green Onions Chopped, Finely
- 1/4 Cup Lemon Juice
- 1/4 Cup Parmesan and Romano Cheese Shredded, Store Bought
- Salt To Taste
- Pepper To Taste
- ` Red Pepper Flakes To taste
Instructions
- Gather all ingredients. In a large bowl whisk together olive oil, lemon juice, salt, pepper, and green onion. Add in honey slowly and whisk vigorously. Chill for 15 minutes and serve. Enjoy!

- Chop green onions finely. Add all ingredients slowly and chill.
