Golden Brown Butter Scrambled Eggs

Simply Simple and Cheap!

Brown butter scrambled eggs are one of the easiest meals that one can make, and not to mention cheap! I remember when I was a young college student trying to make ends meet in my very first apartment. IT.WAS.HARD. to say the least, but now, looking back on it, I am happy for the struggle. The struggle has helped me become the hardworking person that I am today. When you have everything handed to you, you can’t really understand what it takes to be truly independent, a vital necessity to becoming an adult.

Scrambled eggs became a staple in my first kitchen. Having little utensils, I needed something simple, cheap, and versatile. How can one go wrong with eggs? I must say that it took some time to realize that instead of a dollar cheeseburger from McDonald’s, I could make cheap healthy meals from home and save! Sometimes you don’t know until you know. Even as a simple concept as buying a carton of eggs.

Brown butter scrambled eggs are so delicious due to the added fat content, a luxury I didn’t have before, but now I feel so appreciative that I can prepare a copious number of eggs with simple, indulgent ingredients for my big brood.

The quality of eggs definitely effects the taste of a simple dish, as well as the quality of the butter. Organic free-range eggs tend to lend to a creamier texture. You can certainly tell the difference between a standard grocery egg and a fresh farm egg. Salt free organic butter gives these eggs a silky texture and allows you to season to your own liking.  Using a well seasoned cast iron skillet can also elevate these sumptuous eggs.

The key to fluffy eggs is to:

 1: Use an immersion blender to combine the yolks and whites effortlessly. A good friend of mine offered this technique before and I haven’t looked back. It sure beats hand whisking (pun intended, ha) but still an option.

2: A dollop of heavy/table cream to the mixture gives a rich flavor.

3: Sautéing the butter in conjunction with equal parts olive oil on a medium high heat will help brown the butter slowly and avoid scorching and burning.  

4: A hot skillet will bring the eggs to curdle faster. To create extra fluffy eggs, folding over on itself as opposed to vigorous stirring is the key.

5: When seasoning, you can add in salt while scrambling, but wait to add pepper to the end so the eggs aren’t a dreary gray.

Don’t limit yourself! You can make these for lunch and dinner too!

Golden Brown Butter Eggs

Equipment

  • Cast Iron Skillet
  • Whisk
  • Immersion Blender, Optional

Ingredients

  • 2 Tbsp Butter
  • 1 Tbsp Olive Oil
  • 9 Large Eggs
  • 2 Tbsp Heavy Cream
  • Salt, Pepper to taste

Instructions

  • Preheat cast iron skillet to medium to high heat.
  • Crack 9 eggs in a large bowl. Add heavy cream. Use immersion blender to thoroughly combine eggs and cream.
  • Add olive oil and butter to heated skillet. When hot, and butter has turned a golden brown, add eggs slowly and let sit for 30 seconds to form the first layers of egg on the bottom of the skillet.
  • Use spatula to fold the bottom layer of a egg over the top and continue to do so until desire consistency.
  • Once done, add salt and pepper to taste and enjoy!
