Crack 9 eggs in a large bowl. Add heavy cream. Use immersion blender to thoroughly combine eggs and cream.
Add olive oil and butter to heated skillet. When hot, and butter has turned a golden brown, add eggs slowly and let sit for 30 seconds to form the first layers of egg on the bottom of the skillet.
Use spatula to fold the bottom layer of a egg over the top and continue to do so until desire consistency.
Once done, add salt and pepper to taste and enjoy!
