How to: Make a Delicious Brodo

Brodo can be used for various soup bases and dishes but can also be had as a warm beverage.

Equipment

  • 1 Pressure Cooker

Ingredients

  • 1 Large White Onion
  • 2 Large Carrot
  • 1 Whole Garlic Cut in half
  • 3 Stalks Celery
  • 2 Pieces Beef Bones with Marrow cut in half
  • 1/2 Pound Chicken Bones
  • 1/2 Pound Pork
  • 1 Spring Rosemary optional
  • salt and pepper to taste

Instructions

  • Preheat oven to 400° and place all washed vegetables ( except rosemary sprig) and bones on a baking sheet and roast for 25 minutes or fragrant.
  • Combine all roasted ingredients in pressure cooker, add seasoning and rosemary and cover with filtered water.
  • Set Instant Pot to seal and cook for 2 hours. Once time has elasped strain and store in a sealed glass jar.
