2LargeRusset Potatospre-boiled, diced
6 Carrots peeled, minced
2Large White Onions minced
2Large Poblano Peppers minced
1 Tbsp Garlic minced
2 TspSalt
2Tsp Black Pepper
3TbspOlive Oil extra virgin
2Lbs Ground Beef
3Cups White Rice Cooked to packaged directions
Instructions
Place half of the olive oil to a pre-heated pan set to meduim high heat. Once heated, add ground beef, 1 tsp of salt and pepper and brown until crispy about 12 minutes.
While meat is browning, use the food processor to finely chop all but the potatoes. Add carrots, peppers, and remaining olive oil to browned meat. Saute until softened to desired consistency. Add onions and garlic until fragrant. Finally add pre- boiled and diced potatoes and add remaining seasoning.
