Rise and Shine Maple, Cinnamon, and Raisin Baked Oatmeal

Every morning is a busy morning. The hustle and bustle of the daily grind effects the young and old alike. Be it school or the daily commute, it feels as it there isn’t enough time to do the things we want, much less the things we have to do. Breakfast can be the perfect way to start your day. Breakfast can be more delightful if it is made the day ahead like I tend to do for my little darlings. Although I stay home with my brood, It really cuts into my morning to make a well rounded meal for my kids. Especially because they eat a TON! So much so that I tend to make double batches of everything to save myself some time. Baked maple, cinnamon, and raisin oatmeal is a quick meal that can stretch over the whole week. More time to watch the sunrise or have a 20 minute meditation session to begin the day with calm.

Food Recipe

This recipe is a quick easy way to get all the protein you need to keep you full. My family and I typically try our best to stay away from sugar, but even the best efforts can fail. That being said, I try to cut out sugar as much as possible in my daily recipes so we can splurge later on. Here, I use premium maple syrup in replace of the sugar. Using high quality ingredients ensures the best outcome and offers flavors that bring you back for more!

Maple Cinnamon Raisin Baked Oatmeal

Baked Oatmeal

Total Time 45 minutes
Servings 6 people

Ingredients

  • 2 Cups Old fashioned rolled oats
  • 1 tsp Baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp Vanilla extract
  • 2 Cups Milk Sometimes I use canned coconut milk
  • 1/4 cup high grade maple syrup
  • 2 eggs, slighted whisked
  • 2 Tblsp melted butter, cooled
  • 1 cup raisins
  • Cooking spray

Instructions

  • Preheat oven to 375°Spray a 9×13 rectangular pan with cooking spray so the oatmeal wont stick.
  • Mix all wet ingredients: Combine milk, maple syrup, eggs, butter, and vanilla extract.
  • Mix all Dry ingredients: In the same bowl as the wet ingredients, combine oats,nutmeg,cinnamon,salt, and baking powder, and raisins.
  • Pour ingredients into prepared pan and place in the center of the oven for 35-40 minutes.
  • Once done, let cool for 5 minutes and serve warm. Enjoy!

This recipe offers limitless customization’s. I often add an extra splash of milk for creaminess, whatever nuts I have lying around(in this case almonds) and maybe a handful of chia/flax seeds for an extra health boost. Another “customization” if you can call it that is to use an aluminum pan for easy preparation and easier cleanup!
