What a crazy time is has been for the world. Covid has brought us through some scenarios we have never been through before and now the residual effects are coming back around to haunt us like the true nightmare the pandemic has been. On so many levels. Now the rising cost of food leaves many wondering not just about the cost of gas to get to work, but about how they will feed their little darlings. I totally understand the sentiment. Albeit not an immediate concern, but no one really knows what the future holds and that means planning ahead. At least for me. I’m the type of person who likes to plan as far into the future as I possbily can. And when I see a storm coming I want to make sure that I have all the tools to help me survive. That being said, cutting back on expenses is one way that you can ensure you will have a buffer for the future. Saving and spending less at the grocery store can give you the cushion to relax and not worry about current events. Eating in a more simplistic way not only will help your body and mind; process foods damage our organs and cloud our judgement, it will also help your wallet as well.

Buying in Bulk


There is not time like the present to consider how to cut back on your expenses so you can make it through the rainy days ahead. One can only hope that the worse is behind us, but we arent all clairvoyant now are we. So we must do what we can. This crispy vegetable and beef hash is not only delicious but also very resonably low cost. Especailly if you have the ability to buy in bulk! When you consider that it is five times more expensive to eat out and 3 times more expensive for a meak kit, eating out home just makes so much more sense. Of course if you dont have the needed utensils, pots and pans, you will have to account for that. But even still, you will come out ahead. Consider the price of the following items when bougfht in bulk :

That is a grand total of $80! All these ingredients can make several meals and all under $100 for a family of six. I count that as big savings! Of course you can also plan ahead with these very simple ingredients and have a very satisfying meal morning, noon, and night.

Helpful Hints

Having a food processor will make your meal way easier to make and you can get in more veggies than you would by roughly hand chopping. In this recipe I was able to get 6 carrots, 2 large white onions, 2 very large potatos, and 2 large Poblano peppers. You can always add anything you like. This is a versatile recipe. I also added corn at the end because I had it in the freezer. If trying to avoid carbs serving with rice is also optional and can be omitted.

Crispy Beef Hash

A super healthy quick meal to fill bellies quick and in a hurry.

Equipment

  • 1 Food Processor

Ingredients

  • 2 Large Russet Potatos pre-boiled, diced
  • 6 Carrots peeled, minced
  • 2 Large White Onions minced
  • 2 Large Poblano Peppers minced
  • 1 Tbsp Garlic minced
  • 2 Tsp Salt
  • 2 Tsp Black Pepper
  • 3 Tbsp Olive Oil extra virgin
  • 2 Lbs Ground Beef
  • 3 Cups White Rice Cooked to packaged directions

Instructions

  • Place half of the olive oil to a pre-heated pan set to meduim high heat. Once heated, add ground beef, 1 tsp of salt and pepper and brown until crispy about 12 minutes.
  • While meat is browning, use the food processor to finely chop all but the potatoes. Add carrots, peppers, and remaining olive oil to browned meat. Saute until softened to desired consistency. Add onions and garlic until fragrant. Finally add pre- boiled and diced potatoes and add remaining seasoning.
  • Serve hot over rice and enjoy!
