How to: Make A Delicious Brodo

Stock, Broth, or Brodo

If you are anything like me you are an absolute foodie. So when it comes to the labeling of dishes and ingredients and their uses we ( I ) tend to be a little bit of a stickler. Especially when it comes to soup bases also known as broths. One can easily use the terms broth, stock, or brodo interchangeable ; all have some similarities, but the subtle difference can make or break a quality dish. Homemade or restaurant quality alike.

The Difference

Stock and broth are typically an unseasoned soup based made from bones, vegetables and sometimes even meat, but brodo requires all of the above, simmered or pressure cooked for hours! Stock is a little bit more loose in consistency as opposed to a darker, thicker brodo. When making, I love to use a variety of bones and meat to add a certain complexity you wouldn’t have otherwise. Pork, beef and chicken all add such a savory component to any dish in need of a solid base. Roasting the bones prior to cooking also adds depth to your brodo.

Health Benefits

Even having said that, it really matters not if the terminology is one hundred percent correct because this is one of the most nutitious foods on the planet and has real health qualities. Now of course im not a docter and I dont have the “proper” credentials to speak to the data, but what I will say is that their are plenty of anetedotal stories on the internet. Scientific studies typically begin by word of mouth. And if that isnt enough just try it for yourself!

I have used bone broth for short term fasting, a weightloss, and detox. I have also used brodo for the most persistant of coughs and for adding collagens to pain stricken joints. When my children are ill and need something to soothe their stomach, I give them this golden elixer. More recently I have had extreme back pain due to a tilted hip. With the combination of fasting, strectching , and yes, bone broth, I was able to reduce my pain by 80%.

Vegetables and Add-Ins

Vegetables can vary when making this depending on your intentions. For me , I love an extra zesty kick, and add poblano peppers. Rough chopped carrots, onions, garlic, celery alongside pepper and salt will suffice for a quick preparation.

Using a large stock pot will work perfectly but if you are short on time use a pressure cooker! When homeschooling my four little darlings, I have a limited time to spare and I dont always plan perfectly, but I can make my brodo in 2 hours or less!. How to: Make a Delicious Brodo

Brodo can be used for various soup bases and dishes but can also be had as a warm beverage.

Equipment

  • 1 Pressure Cooker

Ingredients

  • 1 Large White Onion
  • 2 Large Carrot
  • 1 Whole Garlic Cut in half
  • 3 Stalks Celery
  • 2 Pieces Beef Bones with Marrow cut in half
  • 1/2 Pound Chicken Bones
  • 1/2 Pound Pork
  • 1 Spring Rosemary optional
  • salt and pepper to taste

Instructions

  • Preheat oven to 400° and place all washed vegetables ( except rosemary sprig) and bones on a baking sheet and roast for 25 minutes or fragrant.
  • Combine all roasted ingredients in pressure cooker, add seasoning and rosemary and cover with filtered water.
  • Set Instant Pot to seal and cook for 2 hours. Once time has elasped strain and store in a sealed glass jar.
